Camp Food
Our family is heading out to go camping later this month, so I’m planning what food I’ll be making ahead and what we’ll have for meals. Here are my plans so far…
Breakfasts:
Every morning when we camp, my husband loves to make “sunrise sandwiches” for our sons (eggs, bacon, and cheese on English muffins). He and I have the eggs, bacon, and cheese with some fruit on the side.
Lunches: These are very open-ended, each person choosing food that sounds good to them. I will plan on enjoying lunch foods like SCD yogurt with honey & nuts, fruit, SCD cookies, and cheese.
Dinners:
Terrific Chili with a grated cheese topping (on quick rice for everyone else).
Polynesian Pile-On - Everyone chooses from a selection of foods to make a delicious pile-on: Chicken I cooked and shredded ahead, grated Colby Jack cheese, pre-chopped green onions, pre-chopped celery, Dole pineapple chunks, (and rice, gravy, and chow-mein noodles for everyone else).
SCD yogurt with nuts & honey (hot dogs for everyone else).
One of my favorite foods to bring along for a camping trip are Lemon Poppyseed Muffins.
I also like to bring along black tea and peppermint tea for some yummy hot drinks.
And these super easy Slice-n-Bake Shortbread cookies are a great camping treat (maybe to enjoy while everyone else has s’mores):
