Easy food to share with others
Plus dairy-free SCD recipes, pre-made SCD food, and a weekly menu plan
Summer is in full swing! As a homeschooling mom, I always find it hard to adjust to the summer schedule, as we go from about 60 mph to 5 mph in a day! But I feel I am finally settling down to the open, free summer schedule and enjoying some time to think about and do things I normally don’t have time for. Like yesterday I had time to wash our two rugs (I love Ruggable washable rugs!), and I’ve been working on some projects that have been in the back of my mind for a while. I also love a good cup of tea outside in the cooler morning temperatures with a laid-back morning schedule. Our backyard is coming together and pretty soon I’ll be able to start planting bushes, flowers, and vegetables. Ah…summer!
The current situation in our backyard…My husband is laying lots and lots of pavers and making the design work out just right! And the garden area is back behind the camera along the fence, and I’m researching English cottage gardens to figure out how to do it!
One of the things I also have more time for is making food for people in our church who have recently had babies, surgery, or some other big life event. I’ve found that two meals in particular are my favorite to bring, because they can easily be made into double or triple batches and after delivering them, I come home to easily serve my family and myself the same meal!
Easy meals for sharing
The first easy meal to share is San Antonio Tacos. I use the Favorite Taco Pork recipe (that I’ve already made and frozen in portion sizes) for the meat. After thawing out the frozen pulled pork in the microwave, I heat it until slightly crispy in a pan with avocado oil. While that’s heating up, I chop up tomatoes, cube some avocado, grate some cheese, and whip up cabbage slaw - chopped cabbage, green onion, and cilantro with fresh lime juice, salt & pepper. I put half of what I made into containers for the family I’m bringing it to (along with tortillas or crunchy taco shells and some prepared taco sauce), and all of us are set for a great dinner!
The second easy meal to share is Terrific Turkey Chili. (I actually just call it Terrific Chili these days because I use either ground beef or pork in it since I’ve had trouble sourcing an SCD-legal kind of ground turkey.) I make a double or triple batch, depending on how many people I’m serving either in the crock pot that morning or in a large pot a couple of hours before I leave to deliver the meal. The meal gets served with grated cheese, and sour cream and corn bread (for the non-SCDers). The only issue I’ve had a bit of trouble with when bringing a soup to someone has been how to transport it in a disposable container (I’d rather avoid aluminum with acidic ingredients like tomatoes). Dairy-Free on the SCD?
Raman Prasad and Pamela Ferro wrote the book “The SCD for Autism & ADHD” in which they include a bunch of dairy-free SCD recipes. Raman very generously now has all of those dairy-free recipes on his website! It’s a wonderful resource, even if you aren’t dairy-free. You can find links to those dairy-free recipes here.
